It’s Coming Home!

For those of you who enjoy baking/cooking as much as me, I am sure you will agree that it is fun to experiment every now and then and go outside the box. So, for today’s Sunday brunch, I decided to make some wholemeal muesli muffins with a blue cheese centre! 🧀 🧀 (And with a bit of a patriotic theme for the Euro 2020 Final tonight! ⚽️ 🏴󠁧󠁢󠁥󠁮󠁧󠁿 )

I do like playing with the idea of sweet with savoury, and took some inspirations from a cheese plate and the combination of cheese with dried fruits and nuts.

Sunday Brunch Time

Happy Sunday! For the first time in a very long time 😅, I woke up early this morning and went for a run 🏃‍♂️ before making a trip to the supermarket. As a reward to myself, I decided to make some delicious healthy veggie fritters for brunch this morning! 😋 (And they are so effortless to make!) Just perfect in this glorious weather! ☀️ ☀️

Veggie Fritters

Quantity: 5-6 Fritters

Ingredients:

For the fritters:

75g wholemeal plain flour

1 tsp baking powder

60ml milk

1 egg

2 tbsp olive oil

50g sweetcorn kernels, drained

3 broccolini, chooped

1 spring onion, chooped

1 chilli, seeded and chopped

Coriander, chopped

1 tbsp garlic paste

1 tbsp chopped ginger

A pinch of salt

A pinch of black pepper

For the side dip:

170g fat-free Greek yogurt

1 tsp olive oik

1 tsp lemon juice

1 tsp garlic paste

Coriander, chopped

A pinch of salt

A pinch of black pepper

Method:

1. Sieve the flour and add in the baking powder.

2. Make a well with the flour and mix in the milk and egg.

4. Add all the other ingredients for the fritters and mix until well-combined.

5. Spoon the batter onto a heated frying pan with oil. Fry each side for a few minutes, or until golden. You may also bake them in the oven for a crispier texture.

6. Make the dip by combining all the ingredients together. Serve the fritters with the dip.

Happy Sunday! Only a very short post today, but it’s nice to get back to some cooking/baking after some time. After several long weeks of work, it’s nice to be able to catch a break today, so I decided to make a classic brunch with a bit of a twist. These fluffy American pancakes 🥞 are infused with nori (Japanese seaweed) and served with crispy bacons 🥓 – one of my favourite things of all time! 😋 Perfect and rich when served with a dab of butter!

Did You Just Say ‘Savoury Cake’? 😱🤣

A typical Sunday means a lazy day for me in bed and eating (so basically living like a pig haha!🐷 Quarantine life, eh? 😂) But having, for once, not stayed up late on a Saturday night, I woke up early this morning to cook myself a delicious Sunday brunch.😋

I really enjoy experimenting when it comes to baking and cooking. Once in a while, I will start browsing online looking for new recipes to try out. With the current coronavirus crisis and lockdown situation in the UK, it has become very difficult to find all the ingredients I want (eggs and flour are particular rare sights now!) But when I came across this recipe of a savoury cheesy mushroom cake last night (which I happened to have all the essential ingredients for), I knew it will be the perfect Sunday brunch to start my lazy day! 🍄🍄

I know some of you will SCREAM at the idea of a savoury cake 😱🤣 but I got to say I am really enjoying the rich mushroom flavour in it, especially when paired with some green chilli pesto.😋 You can see the original recipe here at this link👉 https://www.easycheesyvegetarian.com/cheesy-garlic-mushroom-cake/ . I did adapt the recipe slightly by substituting some of the mushrooms with grated carrots and also added a little less cheese, since I didn’t want it to be too heavy.

After all, life is about trying, right? 😉

Before Departing…🍁🍁

This morning I woke up at one of the earliest times ever on a Sunday! ☀️☀️ (Normally I am completely knocked out well past noon… 😂😂) Nonetheless, this is just going to be a short post. After checking out from the inn, I went for a stroll around Westgate Gardens and Dane Jane Gardens before departing from Canterbury. I took so many photos of the beautiful fall scenery, I thought I have to share some here! 😉

And now I am back in London in my warm, cozy bed, reminiscing about all these beautiful imageries of the nature. ❤️❤️
