Kicking Off the Long Week Off

Happy Friday, everyone! Just a short post today before I am heading into my week-long break from work. 👌👌 (Some plans for this week ahead so will keep you all posted! 😉) Not only did I manage to organise a mini celebration for a colleague’s (belated) birthday at work today 🥳🎉 , but also went out for a top dinner with friends in the central area. 😋 Life is doing good right now! 😆

Journey to the End of the World

Today marks my last day in Folkestone, but there is still plenty of time to kill before I make my way back home. There is so much to do in this small town, I wish I am staying around for longer!

Lobster & Scallop Sunday brunch by Folkstone Harbour

After checking out the hotel, I visited a seafood bar right in front of the harbour and enjoyed a luxurious brunch (it was a £20 whole lobster 🦞, which to me was quite a bargain!) Though I needed to keep warring off a seagull who had been eyeing my food from the get go! 😠 Once I finished and left the table to get some tissue, it wasted no time hopping onto my leftovers and took off with the empty lobster shell! 🐦😂 (Sneaky bird!)

Today’s weather was much more pleasant compared to how it was the past days, so I decided to journey along the other side of the coast, heading into the Folkestone Warren area.

The hotel receptionist did warn me it was tough to get to the beach area down Folkestone Warren, and boy, was he right! I somehow picked the more difficult route along the coast too (typical me- as I found out later I would have had a much easier time walking uphill past the golf courses then back down.) The slippery mud along the path 💦 resulted from the rain the previous days certainly didn’t help (and I really should get a different pairs of shoes besides my usual flat trainers… 😓) The views were definitely worth the effort though! I would take it as my workout for the day done!

A Long-Waited Weekend Getaway

A weekend like this has been a long time coming! With lockdown easing finally allowing overnight stay this week, I wasted no time a few days ago booking my city break from London. As soon as I got off work on Friday, I jumped on an Uber to the train station and away we go! 🚞🚞

Welcome to Folkestone!

For this trip, I picked the coastal town of Folkestone just to be close to the sea. The town overlooks the English Channel and is a nice little tourists’ attraction along the English coast. Taking that into account, I also picked a hotel situated by the seafront. Weather, however, was not on my side from the get-go with strong gusts of wind 🌬🌬 (and rain 🌧) throughout the Friday evening. (Mind you I did expect it as the weather in London have been absolutely miserable this past week too ☹️) In fact it was so windy, I was struggling to even walk (and snap photos 📸 – in fear of my phone getting blown away into the sea! 🌊) So, I basically retreated to my hotel room and restaurant for dinner.

Knowing lockdown easing will probably mean that restaurants may be fully booked up, I spent some time before my trip calling up restaurants to reserve tables for me. (Which is very unlike me as I usually just go on the fly! 😂) After going some researches online, I decided to head to Marleys for dinner on Friday. Absolutely loved the food there and it’s cute, cosy interior! 💓

The staff were all very warm and welcoming, and to top it it off – I think I had the best tuna I had ever eaten in my entire life! 🐟 Perfectly cooked to medium rare and well seasoned – I couldn’t get enough of it honestly! 😂

The next morning after enjoying some ‘me-time’ in the bath 🛁 (and the night before! 😂) I decided to head along the coast as the weather took a nicer turn! (Thank goodness! 🙌🙌)

The Folkestone pier was just simply breathtaking. The sea was so calming and the view truly did throw away all my worries for the week out the window (albeit temporarily! 😂) It really let me appreciate the freedom of being able to travel again.

I also headed to the creative quarter – a quirky, colourful area of the town. Marleys where I visited yesterday was also situated in this unique alley.

When you are in a coastal town by the sea, surely seafood is a must, right? 🦪🦐🦀🐟 Hence my visit to the Harbour Inn for lunch (again booked in advance.)

After the luxurious seafood lunch, I left the restaurant just as rain poured heavily over the town. ☔️☔️ Just so happened I left my phone charger in the hotel, I walked back into my room with my trousers 👖 all soaked. 💦

After taking yet another hot bath and a brief nap in the room, I decided to head to the beachfront (umbrella in hand of course!) as the rain started to fade. Walking gradually into the sun, I was taken by surprise of an amazing view from behind! 🥰🌈

To cap off the day, I went back to the Folkestone harbour for some light seafood snacking by the water.

Day Out in Chiswick

As lockdown easing will hopefully continue on Monday, there is most definite a great sense of normality back in life. Weather in London is as turbulent as ever though as we went through a cycle of rain, sun, rain and more sun throughout the day – but what great fun I had enjoying a day out with my best friend! 😁

We decided to visit Junkyard Market in Chiswick, and after running a bit late on the London tube, I arrived at the outdoor venue just as the rain was about to fall. 🙁🌧

But thankfully as busy as the tent area was, we eventually managed to find a spot to sit down. Due to COVID measures, all orders were done through the app and QR code at the table – but it did allow easier browsing in my opinion. I decided to order an African grilled chicken thigh with chips and also sausage and beans mac and cheese! 😋

The sun is back out again!

It wasn’t long before the sun is shining back out again (typical London lol) and then very quickly back out again! 😂 It literally lasted about 10 minutes when we took our jackets 🧥 off enjoying the warm sun ☀️ before putting them back on again as the dark clouds came matching back! ☁️☁️ But I did grab a vegan ice cream just in time haha!

After staying cosy back in the tents to sit out the rain until it stopped, we decided to take a walk around Chiswick (juice 🥤 in hand) as we made some surprising art discoveries around the area! 🖼

Birthday Picnic! 🥳🥳🎉🎉🎉

Happy birthday to my dear friend @wellnessbyyana! We were truly blessed with glorious weather ☀️ ☀️ this weekend in the U.K., which made it perfect for a birthday picnic in the park! 😉🙌🙌

At the request of my dear friend, this trifle is dairy-free, refined sugar-free and loaded with extra shots of rum ready for the party! 💃 💃 🎉🎉🎉🎊🎊🎊 The trifle consists of a rum and berries jelly at the bottom, layered with a banana sponge cake (soaked with more rum!), strawberries, blueberries and raspberries- all covered with a soya milk custard with a plant-based whipped cream. What a perfect day to celebrate the end of lockdown! 🥳🥳

Dairy-free refined sugar-free rum and berries trifle

Ingredients:

For the jelly:

250g mixed berries (e.g. raspberries and blueberries)

30g honey

25ml water

2 tsp lemon juice

3 shots of rum

2 1/2 gelatine leaves

For the banana cake:

190g self-raising flour

1 1/2 bicarbonate of soda

1 tsp cinnamon (optional)

2 ripen bananas, mashed

20g honey, plus extra to drizzle on the sponge

90ml vegetable/sunflower oil

60ml plant-based milk (e.g. soya/almond)

1 tsp vanilla extract

3 shots of rum

For the custard:

350ml plant-based milk (e.g. soya/almond)

1 tsp vanilla extract

1 tsp elderflower/lemon extract (optional)

4 egg yolks

30g honey

15g plain flour

15g cornflour

For the whipped cream:

Any dairy free double or whipping cream

For the fruits:

Strawberries

Mixed berries (e.g. raspberries and blueberries) to your likening

For the decorations:

Toasted almond flakes (optional)

Goji berries (optional)

Method:

1. Start with the jelly by making a fruit purée. Heat the berries, honey, water and lemon juice in a saucepan. Crush/blend the fruits as you are cooking.

2. Pass the purée through a sieve to get a smooth purée and place it back into a clean saucepan.

3. Soak the gelatine leaves in cold water.

3. Add the rum and heat the purée gently.

4. Squeeze the water out of the soaked gelatine and add it to the purée. Stir under heat until the gelatine is fully dissolved.

5. Pour the purée into a clean glass bowl. Let it cool before putting it in the fridge for several hours, or until the jelly is fully set.

6. Preheat your oven to 180C/350F/gas mark 4.

7. Make the banana sponge cake by passing the flour through a sieve. Mix in bicarbonate of soda, salt and cinnamon.

7. Mix the mashed bananas, honey, milk, oil and vanilla extract together until well-combined. Then fold the wet mixture into the dry mixture until well-combined.

8. Pour the mixture into a parchment-lined cake tray and bake in the preheated oven for 20-30 minutes, or until an inserted skewer comes out clean.

9. Remove the cake from the tray and cool on a wire rack.

10. For the custard, heat the milk and extracts gently in a saucepan without it boiling.

11. In a clean bowl, whisk the egg yolks by hand with the honey until pale. Sieve the flours in and mix until well-combined.

12. Slowly pour about half of the heated milk into the yolk mixture, whisking vigorously as you pour. Then, pour the mixture back into the remaining milk in the saucepan.

13. Cook the custard gently over heat, whisking continuously as it cooks until you have a smooth, thickened mixture. (If it doesn’t thicken, add about a tablespoon of cornflour.) Set aside and let the custard cool.

14. Slice the strawberries in halves to prepare for assembling.

15. Cut and layer the banana sponge over the set jelly in the bowl. Drizzle the sponge with more honey and soak with shots of rum.

16. Place the sliced strawberries over the sponge to surround the bowl. Add the remaining fruits in the centre. (You can add more rum at this stage if you want!)

17. Pour the cooled custard over the fruits and use a knife to spread it out evenly. Place back into the fridge to set.

18. Use an electric whisk to whip the cream until stiff.

19. Layer the cream over the set custard and again use a knife to spread it out evenly, filling to the top of the bowl.

20. Spread almond flakes and goji berries over the top to decorate the trifle before serving.

Sunday Brunch Time

Happy Sunday! For the first time in a very long time 😅, I woke up early this morning and went for a run 🏃‍♂️ before making a trip to the supermarket. As a reward to myself, I decided to make some delicious healthy veggie fritters for brunch this morning! 😋 (And they are so effortless to make!) Just perfect in this glorious weather! ☀️ ☀️

Veggie Fritters

Quantity: 5-6 Fritters

Ingredients:

For the fritters:

75g wholemeal plain flour

1 tsp baking powder

60ml milk

1 egg

2 tbsp olive oil

50g sweetcorn kernels, drained

3 broccolini, chooped

1 spring onion, chooped

1 chilli, seeded and chopped

Coriander, chopped

1 tbsp garlic paste

1 tbsp chopped ginger

A pinch of salt

A pinch of black pepper

For the side dip:

170g fat-free Greek yogurt

1 tsp olive oik

1 tsp lemon juice

1 tsp garlic paste

Coriander, chopped

A pinch of salt

A pinch of black pepper

Method:

1. Sieve the flour and add in the baking powder.

2. Make a well with the flour and mix in the milk and egg.

4. Add all the other ingredients for the fritters and mix until well-combined.

5. Spoon the batter onto a heated frying pan with oil. Fry each side for a few minutes, or until golden. You may also bake them in the oven for a crispier texture.

6. Make the dip by combining all the ingredients together. Serve the fritters with the dip.

The Joy of Eating Outside Again 😂

Hope everyone has been enjoying their weekend! In London, we are certainly blessed with some glorious weather in the past week! ☀️ ☀️ As my holiday is coming to an end soon, I had a look back to some of the food I have eaten in the past weeks as lockdown eased in the city… 😂

Hopefully it’s not too much haha… 🤫😂 (In particular, I have really missed visiting food markets.) Nonetheless, it’s just been so nice to be outdoor again and meeting people just like before.🙂 By no means am I taking these things for granted now, so you just have to enjoy life a day at a time! 😉

Let’s hope this joy continues!

Happy Easter Sunday! 🐰🐣

Hi everyone! The past few months have been quite a wild ride, and I just realised that I haven’t posted in so long! With lockdown and school closure and then return to school again, life really had taken many different turns since the beginning of January. So I am so glad that restrictions are starting to lift again as we entered Easter holiday. 😅 (Plus I am literally dying for a haircut lol! 💇‍♂️)

Meanwhile, happy Easter Sunday to everyone! I decided to make a Easter theme mango cheesecake today after being so inspired by all the amazing bakes I saw on Instagram. It’s been a while since I have baked something more elaborated, so it’s a refreshing feeling to get back into! 😃

Here’s to 2021!

2020 has been a very hard year for many, but at last we are looking towards a new beginning of another year. 👏👏 New Year’s Eve marks a time to reflect and learn, and what a year this has been!

As I was reminiscing the past year last night, I stumbled upon a video on the internet (typical insomniac behaviour lol) that recapped all the old animations I used to enjoy as a child. I have always been a fan of anime. It’s crazy to think some of these animes are over 20 years old (even older than me at that 😬) since I feel like I have been watching them since forever. It’s really a sad, constant reminder that time really does fly by- every small and seemingly insignificant moments in life need to be cherished and treasured before they disappear forever. ❤️

The future is never set in stone, and endless possibilities and dreams lay ahead! So, let’s smash this year! (Like I did to my chocolate ball dessert! 😂) Wishing everyone a happy new year! 🥳🥳🎉🎉🎊🎊🎊 May all your dreams come true in 2021! ❤️❤️

As Long As There’s Christmas

Happy Christmas Eve! 🎄☃️🌟 Almost a week into tier 4, but funnily enough I am still enjoying my time away from work and being left to my own devices. 😌 Obviously this Christmas is a lot quieter than previous years, but I think it’s good to find some peace in these uncertain times.

Continuing my spree of festive baking, I decided to make a traditional Yule Log today. The filling is a whipped cream with raspberries, wrapped in a chocolate sponge coated in dark chocolate ganache and decorated with tempered chocolates. 😋 It’s very straightforward, and I had such a fun time making it because I just love doing tempered chocolate work. 😁👌 And to finish, all it needs a little dust of icing sugar to bring it to life! ❄️❄️
