The following is a mango π₯ and coconut π₯₯ cake surrounded by white chocolate feathers- a technique I also used to my mumβs 60th birthday cake. (Very easy to do! πͺΆ All you need to do is melt and temper some white chocolate, then take a spoon and scrape the chocolate over baking paper. Once they are cooled and dried, they should peel off very easily. Give it a try! π)
To celebrate the beginning of a long holiday, I decided to go a bit all out and two cakes in one night for the first time! It was definitely quite a work out! ππͺ (How does professional do it?? π)

2020 has been a very hard year for many, but at last we are looking towards a new beginning of another year. ππ New Yearβs Eve marks a time to reflect and learn, and what a year this has been!
As I was reminiscing the past year last night, I stumbled upon a video on the internet (typical insomniac behaviour lol) that recapped all the old animations I used to enjoy as a child. I have always been a fan of anime. Itβs crazy to think some of these animes are over 20 years old (even older than me at that π¬) since I feel like I have been watching them since forever. Itβs really a sad, constant reminder that time really does fly by- every small and seemingly insignificant moments in life need to be cherished and treasured before they disappear forever. β€οΈ

Happy Christmas Eve! πβοΈπ Almost a week into tier 4, but funnily enough I am still enjoying my time away from work and being left to my own devices. π Obviously this Christmas is a lot quieter than previous years, but I think itβs good to find some peace in these uncertain times.
Continuing my spree of festive baking, I decided to make a traditional Yule Log today. The filling is a whipped cream with raspberries, wrapped in a chocolate sponge coated in dark chocolate ganache and decorated with tempered chocolates. π Itβs very straightforward, and I had such a fun time making it because I just love doing tempered chocolate work. ππ And to finish, all it needs a little dust of icing sugar to bring it to life! βοΈβοΈ
I think I have been quite lucky escaping the heatwave by being in Edinburgh from the start of the month (since I donβt take heat very well π₯΅π.) We had it all this week with sunshine, clouds, rains and even a thunderstorm in the middle of the night! β‘οΈ However, it is still summer after all, and I am sure to make full use of my mumβs freezer while staying here. (The freezer I have in my London apartment is nowhere near cold enough to freeze things properly.)
When one thinks of summer, ice cream is a must, so making homemade ice creams have become a bit of a habit of mine lately. But today, I also made my first attempt at making tuiles – which I was surprised how super easy they were to make! (This is the recipe I followed: https://chefiso.com/p/tuiles-recipe/) Not enough only were they perfect for my homemade rocky road ice cream, but they were also beautiful to look at! ππ
These times in quarantine had really allowed me to sit down and reflect on a lot of things in my life. I do believe sometimes we do take things too easily for granted. I am even thankful just being able to sit on my bed now and watch TV most days. π Lately, I have been in touch with my inner child self again and started picking up things I enjoyed doing when I was a kid, whether games or animations. I do miss those times back then. Sometimes, itβs just easier to be young and worry-free, donβt you think? β€οΈ
When I was younger, one of the things I was absolutely obsessed with was dinosaurs. π¦π¦π¦π¦ (I am sure many of you here might feel the same as me! π) Literally any TV/movies/documentaries/books about dinosaurs I will be on it! (Disneyβs Dinosaur back in 2000 was one of my favourite movies back then! π₯ Donβt know how many of you remember that film? π€) And for any dinosaur fans out there, here is my Jurassic volcano chocolate cake surrounded with shortbread biscuit dinosaurs! ππ΄ Also gave me a chance to do my favourite caramel sugar work. π
And now I am enjoying sugar like every other child! π€£π€£
Just a very quick Happy Easter from me! This Easter Sunday may be very different from those in the years before, but I hope everyone is still enjoying a restful Sunday at home! β€οΈ (I certainly have been lazing around at home watching movies after movies lol! π)
Thought I will use this opportunity to share the Easter egg cookies I made last year. These cookies were made with Mars Bars and seasoned with salt to give a salted caramel-like feel to them. π They were then decorated with coloured icing and Smarties – a chocolate feast indeed haha! π«π«π«
